Baked Oatmeal-Kid Approved

My family has been sick this week and having a go-to healthy meal in the fridge to just take out and warm up has been so nice!  This dish is an easy and original one to bring to brunches or serve when you have guests.  My favorite berry to use is black berry, but everything I've tried has not disappointed me!  I always look forward to eating it so do yourself a favor and make it!!

Ingredients

2 cups rolled oats
1/3 cup sugar 
1 teaspoon baking powder
1 1/2 teaspoon cinnamon
1/2 teaspoon salt
2 cups milk
1 large egg
3 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1 1/2 cup of your favorite berry

Preparation

Preheat oven to 375, generously butter the inside of an 8-inch square baking dish

In a bowl, mix together the oats, sugar, baking powder, cinnamon, and salt.

In another bowl, whisk together the milk, egg, half of the butter, and vanilla.

Sprinkle two-thirds of the berries in the bottom of the prepared baking dish.

Cover the fruit with the oat mixture, then drizzle milk mixture over the oats.

Scatter the remaining berries on top.

Bake for 40 minutes until oat mixture has set.  After removing from the oven, drizzle the remaining butter on the top with a sprinkle of sugar.  My family also likes to pour a little milk or whipping cream on top.
